We've done tours in TW 3.0 and have published both to Java and Flash. When we run the flash tour, however, the FOV settings that were made to the scene are not kept. It's seems like it goes to the default settings. Whereas with the java, the setting we put in for PAN, Tilt, and FOV work just fine!!
Are you making your own "Movie Track" and not using the default movie track called "Slideshow"? If so, copy the Slideshow movie track and make the copy the default and apply your setting to the new movie track and publish again.
I have also posted a topic some days ago for the same issue.
I didn't find any way to make it working in flash.
The bad is that flash is better quality than java I thought.
What type of panorama did you use ?
Cylindricals ?

Guillaume, I use 0-360 lens which creates cylindricals, and then use PTViewer software to unwrap. I have no problem with JAVA published tours, just flash.
