Well, my fathers day was something to put on the calendar, but not nearly as exciting as a 40D. Congratulations on what initially looks like a great calibration technique. We do something similar, 2 broom sticks attached to each end of a 15 foot fence row. Oh the fence is outside.
Living room: At first I thought the upper ceiling line and computer chair was mis stitched until I looked closer and its only an offset wall.
The ceiling zenith and tripod head nadir black squares are the first place I look to check for alignment. Both black boxes are well formed and about the same size. I think you found the correct 'no parallax point'. Only issue I found was in the nadir, see ottoman seat lower left edge and the edge line appears to have small wiggle. But the wiggle does not appear in the upper leather bead near the mid and top edges, so it might acutally be some material layer below.
Typically a stitch seam transverses from image bottom to top.. and the ceiling fan appears clean.
I can not see any stitch issues in counter tops, cabinet edges, picture frames or ceiling lines.
Other issues, I suspect you did set the camera white balance for incandescent or Kelvin 3200. And locked the Sigma 8 to f/8 at infinity oxo. Image appears soft.
